There’s a certain quiet hum that comes with late winter on the coast, the days are getting a little brighter, the air feels just a touch softer, and behind the scenes here at Rosemary Lane & Co., we’ve been busy dreaming up what this next season will look like.
As we look ahead to spring, we’re feeling excited about what’s to come for our little food truck. This year, we’re expanding beyond our signature Nourish Bowls and exploring a few new, simple, thoughtfully prepared menu options that feel just right for the changing season. Think cozy, comforting, vegetarian dishes that can be prepared in our kitchen, warmed gently on the truck, and served quickly so you can enjoy something nourishing without the wait.
We’re playing with ideas like hearty mushroom and lentil bolognese over creamy polenta, warming coconut chickpea curry bowls, and fresh Mediterranean-inspired boxes for brighter days. Our goal is to keep everything rooted in the same values you’ve come to expect from us: wholesome ingredients, intentional preparation, and food that feels like care in a bowl.
We’re also looking forward to adding breakfast service this year at select locations including simple, pre-made breakfast sandwiches and our River City Coffee drip coffee for those early-morning starts. More details on that to come soon!
For now, we’re setting our sights on a tentative opening date of May 1st for the season. That said, if we manage to get everything in place a little earlier than planned, you may just see us out for a few pop-up days in April, weather and organization permitting.
You’ll also see us in a few different places this year. We won’t be in one permanent spot instead, we’ll be popping up along the Sea Walk (our original home) and you’ll also find us at various events throughout the year. We’ll share locations and dates as they’re confirmed, so keep an eye on our updates.
